Most modern day smokehouses ‘dry-cure’ salmon through salting. However Summer Isles ‘wet-cures’ their salmon, which means the salmon is marinated in a blend of rum, molasses, juniper berries and black peppercorns. This form of curing the salmon allows subtle footnotes from the brine to release during the 24 hour slow-smoking process, producing a firm textured smoked salmon with a full-bodied smoked flavour. Furthermore, hand-slicing techniques ensure only the finest cuts of smoked salmon go into every pack.

 



 

Sweet Cure Cold Smoked Salmon from Summer Isles Foods
Fresh sides of Scottish Salmon are delivered to our smokehouse in Alness where they put into a brine-marinade of rum, molasses, juniper berries and black peppercorns before being slowly smoked over oak whisky barrel shavings. Once rested after the smoking process, each side of salmon goes through a hand-slicing procedure which ensures only the finest cuts are put into each pack.

Dill Cured Salmon from Summer Isles Foods (Gravadlax)
Fresh sides of salmon are steeped in a sweet dill marinade before going through an slow air-drying curing process. The salmon is compressed with fresh dill after being cured, then finally hand-sliced to ensure only the finest cuts go into every pack.
